When I cook I try and jam pack my food with as many nutrients as possible. So long as you’re not having these with dairy (like I did...but the kids didn’t) you’ll find these an excellent source of iron.

Dairy unfortunately reduces the absorption of iron. If you’re trying to increase your iron levels it’s best to eat foods rich in iron away from dairy if possible.

One my my biggest tips for anyone working shift work is planning ahead - I used to spend SO MUCH money at either a garage before work or buying lunch at the work café, since I’ve been planning ahead not only have a saved money but also I have such a better idea of what I’m putting into my body😋 (the salad looks a little sad because well aren’t we all?! It’s 32 degrees outside)😂

I still haven’t slept but I start work in about 3 hours, I plan to have a gym session and then just power through until tonight 🙄 the transition from night shifts to days is always the hardest for me! At least it’s only a 9 hour shift and not the usual 12😍

My go to dressing is usually lemon juice & olive oil but today I really felt like something different, something spicy.

I love peanut butter & pretty much all nut butters, but peanut is always on our cupboard! 
As long as you choose a good quality peanut butter (sorry kraft but you really don’t cut it) it is an excellent source of protein, fibre & mono & poly unsaturated fats.
.
A good quality nut butter should contain only nuts. It really isn’t rocket science. Avoid brands that include ingredients such as vegetable oil, sugar & salt.
Nuts contain unsaturated fats (the natural oils) so there really is no need to add in other oils such as vegetable oil. 🙅🏾‍♀️
.
There was only a sliver of avo left in the fridge 😟 so adding this peanut sauce to my salad & roast veg ensured I got a little bit of healthy fat in my lunch today.
.
// Peanut Sriracha Sauce 🌶🥜
.
- Ingredients -
2 tbsp @picspeanutbutter
1 tbsp sriracha 
1 tsp tamari
1 tsp lime juice
2 tbsp hot water - Method -
1. Combine all ingredients.
2. Add a little more/less water to achieve desired consistency.

This sauce could also be used as a marinade for tofu, tempeh or other proteins. 😊

You will need a 250g box of cannelloni (I buy the dried cannelloni, size 30’) and 2 cups of a good quality Tomato Sugo (I used 2 bottles of Don Antonio Traditional Sauce 500g) for this dish in addition to the ingredients listed below. I would love to have the time and energy to always make things from scratch but it’s just not possible at the moment! It takes a little effort but it’s delicious!

For the Ricotta:

오늘도 일찌감치 더운 아침 날씨보고 카페로 총총,,,☆ 그래서 한끼를 아주아주 푸짐하게 먹었어요🙆‍♀️
오랜만에 엄마가 카레 했는데 안먹을 수가 없잖아욥!!🤣 그래서 현미렌틸콩곤약밥은 칼로리 착하니까 덜 부담스러워서 요거 1분30초 렌지에 돌려서 카레랑 같이 먹어줬어요♡ 밑반찬은 닭가슴살어묵바 꼬치는 빼고 야채랑 청양고추랑 같이 굴소스 조금만 넣어서 쓱쓱 볶아서 카레랑 같이 묵어주기🙋‍♀️🥰👍
현미밥이 약간 찰지니까 또 카레같이 국물이랑도 쓱싹 잘비벼지고 더 잘어울리네요♡

I recreated my fave healthy meal, @seasweetspoke 's poke bowl and it was deeeliiiciiioouus.🍲 It looks complicated, but it's actually pretty easy. No cooking required! 🍽️ ---------------------------------------------------------------------------------- I started with a base of chopped kale 🥬with a ginger miso dressing (miso, picked ginger, garlic, red pepper flakes, mct oil, soy sauce, rice vinegar blended together)

Then I marinated my diced ahi tuna in rice vinegar, soy sauce, sesame oil, red pepper flakes, sesame seeds, and sliced green onions. 🍣

I topped it all off with premade imitation crab salad, pickled frozen edamame, sesame seeds, seaweed, and homemade Sriracha mayo (75% nonfat Greek yogurt 25% light mayo).🍲 Best enjoyed with chopsticks 🥡

Easy peasy paleo chicken fingers for when the “what’s for dinner?” conversation turns into a two hour debate (not like I’m speaking from personal experience or anything 🙊). Sometimes when I’ve been at work all day, I love making something for dinner that comes together easy and takes minimal time and effort like veggie scrambles or these paleo chicken fingers, where the air fryer does most the work and I just sit back and eat, the perfect relationship ♥️ Ingredients:
1. 1 pound chicken tenders or chicken breast sliced into slivers
2. 3 @vitalfarms eggs
3. 1/2 cup coconut flour (I used @bobsredmill)
4. 1/4 cup almond meal
5. 2 tbsp @paleopowder aip seasoning 
6. Avocado oil spray
Start out by whisking the eggs together in a small bowl. In a separate bowl, combine the coconut flour, almond meal and seasoning. Make sure you spray the pan for the airfryer with the avocado oil spray before placing the tenders so they don’t stick. Dip the chicken tender in the eggs, then in the flour mixture, making sure to coat completely. Once all the chicken tenders have been coated, place the pan in the airfryer and cook on 400 for 7 minutes, then flip and cook for an additional 7 minutes. Serve with @primalkitchenfoods dressings like thousand island or ranch #losingitwithmelissa #whole30meals #paleorecipes

In the spirit of TBT, I would like to share one of the best dishes I've ever made: grilled Terriyaki salmon poke bowl! I remember I was driving home from work and had this sudden urge to grab a poke bowl on my way...while stuck in traffic, I started thinking about all the typical components in a poke bowl and realized I already had most of them in my fridge! The visualization part came next, in terms of how I would go about preparing all the different components, the salmon, the red peppers, the kale, the corn, the coleslaw, the avocado and brown rice. As soon as I reached home, I excited prepared everything and 30 minutes later, I was a very happy healthy homechef enjoying this poke bowl!

I remember I was driving home from work and had this sudden urge to grab a poke bowl on my way...while stuck in traffic, I started thinking about all the typical components in a poke bowl and realized I already had most of them in my fridge! The visualization part came next, in terms of how I would go about preparing all the different components, the salmon, the red peppers, the kale, the corn, the coleslaw, the avocado and brown rice. As soon as I reached home, I excited prepared everything and 30 minutes later, I was a very happy healthy homechef enjoying this poke bowl!

The best part of this dinner is the fact that I used the same seasoning for both...garlic powder, onion powder, paprika, chili powder, tumeric, salt and pepper and a dash of olive oil..

Here's a healthy, quick and easy crumble to make with all those lovely cherries and berries that are in season now:

1. Preheat oven to 375°F
2. Crush some cherries and berries in a bowl and toss with a bit of flour, chia seeds and a touch of maple syrup, honey or agave
3. Combine oats, almonds, dried cranberries, flax seeds, maple syrup, flour, cinnamon, nutmeg and coconut oil to make the "crumble"
4. Grease ramekins or baking dish with coconut oil and fill with fruit mixture then top with "crumble"
5. Bake uncovered for 20 minutes and serve alone, add a few chocolate nibs or with some yummy nice cream!
